Serafino Sharktooth Shiraz 750ml

Serafino Sharktooth Shiraz is named after a giant fossilised Megalodon tooth found on Serafino's Willunga vineyard in McLaren Vale in the 1980s. It is the winery's flagship Shiraz, made from the best rows of that vineyard by the Maglieri family's Serafino Wines.

Serafino Sharktooth Shiraz is best served at room temperature, around 17 to 18°C, in a large red wine glass. Decant it for about an hour before serving, and it will also keep improving in the cellar for several years.

Serafino Sharktooth Shiraz typically tastes of blackberry, plum and dark chocolate with liquorice and spicy oak. It is full-bodied and rich, with firm tannins and a long, warming finish. Fruit and oak character vary a little by vintage, and a few years in bottle softens the tannins and adds savoury depth.

Serafino Sharktooth Shiraz goes well with chargrilled ribeye, braised beef cheeks and slow-cooked lamb shanks. Its rich dark fruit also stands up to barbecued brisket, venison and mature hard cheeses. Its firm tannins are softened by protein and fat, so richer red meat dishes show it at its best.
