Made by Michael Deinlein, a distiller with German heritage, this gin is produced in a German Arnold-Holstein copper hybrid pot still and triple-distilled before being distilled twice more with eleven botanicals. Among them is horopito, an ancient New Zealand flowering plant known as peppertree, which lends a chilli-like warmth and spice that sets this gin apart from standard London Dry styles. The spirit is hydrated with filtered spring water sourced directly from beneath the distillery, and organic botanicals are used wherever possible.
