Bollinger PN AYC21 Gift Box 750ml is a blanc de noirs Champagne made entirely from Pinot Noir by Bollinger, and it comes in a gift box. The fruit comes mainly from the chalky terroir of Aÿ, with further grapes from Tauxières and Mutigny. The AYC21 code in its name refers to Aÿ and the 2021 harvest on which the wine is based.

Bollinger suggests serving it chilled at 10 to 11 degrees, slightly warmer than many Champagnes, which brings out its layers of flavour. Use a white wine glass. Pan-fried scallops, roast turbot and apricot tart were all suggested at its release, and Dover sole or roast lamb also suit its weight.

PN AYC21 is the seventh wine in Bollinger’s PN range, a series that looks at Pinot Noir on the top sites for the grape in Champagne, with each release changing focus. Bollinger’s roots in Aÿ go back to 1829, and many of the grapes come from the family’s own vines around the Montagne de Reims. Part of the reserve wine in the blend is aged in magnums, a practice shared with the house’s other non-vintage wines.
The 2021 season shaped the wine. A cold spring, a very hot summer and historically low yields produced concentrated fruit, and the house chose to use that harvest for the PN range rather than for a vintage Champagne. Reserve wines from earlier years were then blended in, which is why this wine is built on 2021 rather than made from it alone.
Deep yellow in the glass, it opens with ripe quince, Mirabelle plum and toasted nuts. The palate is creamy yet lively, with yellow fruit and brioche-like notes running through to a lingering blood orange finish.
A good choice for someone who already enjoys Pinot Noir and wants to see the grape on its own in Champagne.
