Pour it very cold, at about 8 degrees, in a tulip glass and let it warm a little as you drink. Natural oysters and sashimi are classic partners, and it also pairs well with a plate of Parmesan and salted almonds before dinner.
- 2019 Franciacorta Millesimato, Lombardy
- Chardonnay, Pinot Noir and Pinot Blanc
- An average of 48 months on lees, no dosage
This vintage is very dry but still has a lovely juiciness, with an elegant mousse, gentle tension and a long, persistent finish. With no sugar added at the end, there is nothing to round off the edges, and that is the point of the style.
Dosage Zéro has been part of the Ca’ del Bosco range since 1978, when it launched as Pinot di Franciacorta Dosage Zéro. It became Franciacorta Vintage Dosage Zéro in 1991, and from the 2008 vintage the winery reinterpreted it under the Vintage Collection name, describing it as uncompromising, pure and sincere.
The 2019 is a blend of 24 base wines. They come from 16 Chardonnay vineyards with vines averaging 32 years old, 6 Pinot Noir vineyards averaging 31 years, and 2 Pinot Blanc vineyards averaging 30 years, across the communes of Erbusco, Adro, Cazzago San Martino, Corte Franca and Passirano. The year brought small, loose bunches and an early harvest that began on 20 August and ended on 5 September.
Grapes are hand-picked into small crates, chilled and sorted, then washed in the winery’s berry spa. After crushing without oxygen, the musts ferment in small oak casks with barrel ageing of 5 months. Tirage took place in May 2020, followed by an average of 48 months on lees and disgorgement without oxygen.
Suited to drinkers who want a very dry sparkling wine that shows vineyard and vintage with nothing added.
