The distillery was founded in 1869 by John Smith, an experienced distiller who had managed several Speyside distilleries before building his own. He chose the site for its water from the Craggan Burn and for its position next to the Strathspey Railway, which made it easier to bring in barley and send out whisky.
Cragganmore’s stills are what set it apart. The spirit stills have unusual flat tops, which change how the vapour behaves during distillation, and the distillery still condenses its spirit in traditional worm tubs rather than modern condensers. Worm tubs tend to give a heavier, more complex spirit, and together these features help explain why Cragganmore is often described as one of the more layered malts in Speyside.
Pour it neat in a tulip glass and add a few drops of water to open up the honey and fruit. It is also good over a single large ice cube, and pairs well with cheese, smoked salmon or a fruit tart after dinner.
