The Dalmore distillery stands on the shore of the Cromarty Firth at Alness in the northern Highlands, where whisky has been made since 1839. Its stag emblem comes from the Mackenzie family, who ran the distillery for generations; the clan crest dates back to 1263, when a Mackenzie ancestor is said to have saved King Alexander III of Scotland from a charging stag. The distillery is known for a rich house style built on long finishing in sherry casks, particularly Matusalem oloroso casks from the González Byass bodega in Jerez.
The 18 Year Old is released as an annual edition, and the 2024 bottling continues the long sherry influence that defines the expression. The Matusalem casks used here once held a sweet oloroso sherry aged for around 30 years, and the distillery describes them as among the rarest casks it uses. Spending time in both bourbon and sherry wood gives the whisky its balance of vanilla sweetness and darker fruit and spice.
Serve it neat in a tasting glass or with a single cube of ice. It pairs well with dark chocolate, coffee after dinner or a sticky toffee pudding.
