Mitchell & Son Yellow Spot 12YO 700ml is a 12 year old single pot still Irish whiskey, distilled at the Midleton Distillery in County Cork and bottled under the name of Mitchell & Son, the Dublin wine merchants. It is matured in three types of cask: American bourbon barrels, Spanish sherry butts and Spanish Malaga casks, and bottled at 46% ABV.

The Spot name comes from an old Mitchell & Son practice. The merchants filled their own casks with whiskey from Dublin distilleries and marked each one with a dab of coloured paint to show how long it would age. Blue, green, yellow and red spots each signalled a different age, and Yellow Spot was the 12 year old. The original Yellow Spot was last bottled in the 1950s, and the family brought it back in 2012 together with Irish Distillers.
Single pot still is a style unique to Ireland. The mash combines malted and unmalted barley, which gives the spirit a creamy texture and a distinctive spicy edge, and it is triple distilled in copper pot stills. Malaga casks are rare in whiskey making. They are seasoned with sweet Malaga wine from southern Spain, and here they add an extra layer of sweetness to the spice of the pot still spirit and the vanilla of the bourbon barrels.
Pour it neat in a tulip glass and add a few drops of water to open up the honey and fruit. It sits well after dinner with a cheeseboard, fruit cake or dark chocolate, and makes a rich, spicy Irish Old Fashioned.

Expect mown hay, honey and orchard fruit on the nose with a crack of black pepper. The palate is honeyed and sweet with classic pot still spice, ripe fruit and toasted oak, leading to a long, warm finish where the spice and sweetness linger together.
