Serve it chilled in a white wine glass rather than a narrow flute, since the red fruit and structure need room. This is a rosé that handles real food, including barbecued marinated beef skewers, sirloin steak or grilled salmon with lemon and coriander. Grilled courgette and aubergine with a tomato and herb sauce makes a good vegetarian option.
- Rosé Champagne from Reims, France
- 50% Pinot Noir including 15% red wine, plus Meunier and Chardonnay
- Comes in a gift box
Most rosé Champagne uses a small addition of red wine for a blush of colour. Piper-Heidsieck goes further here, and the red wine comes mainly from selected plots in Les Riceys, at the southern end of the region in the Aube. The higher proportion is what the Sauvage name refers to: a wine with more fruit intensity and more structure than a pale aperitif rosé.
At least a quarter of the blend is reserve wine, taken from the house’s collection of more than 150 reserve wines aged on fine lees, each kept by cru. That library is part of what lets a non-vintage wine like this hold its style from release to release. The house was founded in Reims in 1785 by Florens-Louis Heidsieck, and it has been B Corp certified since 2022.
Blood orange, wild strawberry, black cherry and blackberry jam fill the nose, with rose and fresh almond around the edges. The palate is vibrant and intense, with a firm line of red fruit, a touch of grip from the red wine and a dry finish.
Good for anyone who prefers a rosé Champagne with real colour and enough backbone to sit beside a main course.
