Single pot still is a style unique to Ireland. Distillers in the 1800s began mixing unmalted barley into the mash, partly to avoid a tax on malt, and the result was a spicier, oilier whiskey that became the signature of the great Dublin distilleries.
Those old Dublin distilleries later closed, and Teeling describes this release as the first whiskey distilled in Dublin in nearly 50 years. It was made at the Newmarket distillery in the Liberties, which the Teeling family opened in 2015, carrying on a family distilling story in the city that dates to 1782.
The three cask types each add something. Virgin American oak gives spice and vanilla, bourbon barrels add sweetness, and sherry casks contribute dried fruit and depth.
Sip it neat or with a few drops of water to open up the fruit and spice. It also works in a whiskey highball or an Irish Old Fashioned, and pairs well with roast pork, soft cheeses or a fruit tart.

The nose offers grapefruit, lychee and fresh fruit with cinnamon and roasted almonds. White pepper opens the palate, followed by ripe kumquat, peach, poached pear, cream and honey with cooked grains and allspice, before a dry, spicy finish with dark muscovado sweetness.
A great choice for anyone wanting to try the classic Dublin pot still style, or for Irish whiskey fans after more spice and texture than a typical blend.
