Auchentoshan Three Wood 700ml is a Lowland single malt Scotch whisky from the Auchentoshan distillery near Glasgow, matured in three different types of cask. The triple distilled spirit spends its first years in American bourbon casks, then moves into Spanish Oloroso sherry casks and finally into Pedro Ximénez sherry casks. It is bottled at 43% ABV.

Auchentoshan sits on the north bank of the River Clyde between Glasgow and Loch Lomond, and has been distilling since 1823. Its name is usually translated from Gaelic as “corner of the field”. The distillery is known above all for triple distillation, a practice it has kept while almost every other Scotch malt distillery distils twice. The third distillation produces a lighter, cleaner new make spirit, which is why most Auchentoshan whiskies are delicate and gently sweet.
Three Wood takes that light spirit in a much richer direction. The bourbon casks lay down vanilla and soft oak, the Oloroso casks add dried fruit and nutty depth, and the Pedro Ximénez casks bring dark, sticky sweetness and colour. The result is a deep amber whisky that shows how much flavour cask maturation can add to a light spirit.
Serve it neat in a tulip glass, or add a few drops of water to open up the fruit. It suits slow sipping after dinner, and pairs well with dark chocolate, Christmas cake, blue cheese or a cheeseboard with dried figs.
