Bunnahabhain was founded in 1881 on Islay’s north-east coast, near Port Askaig, looking across the Sound of Islay to the Paps of Jura. The distillery was built with its own pier and housing for workers, as the site was hard to reach by road at the time. While many Islay distilleries are known for heavy peat smoke, most of Bunnahabhain’s spirit is made from unpeated malt, and the distillery’s tall stills help produce a lighter, fruity spirit that takes well to long maturation in sherry wood.
The 25 Year Old is one of the oldest bottlings in the distillery’s regular range. After a quarter of a century in cask, the whisky takes on the depth and dryness of long ageing, with the sherry influence carrying through from nose to finish. Bottling at 46.3% without chill filtration keeps that texture intact.
Pour it neat into a nosing glass and give it time to open before tasting. A few drops of water can lift the fruit, but many drinkers prefer it as it is. It pairs well with dark chocolate, walnuts or a slice of rich fruit cake.
