Ca’ Del Bosco Dosage Zéro Magnum 2019 1.5L is the 2019 Vintage Collection Dosage Zéro from Ca’ del Bosco in Lombardy, northern Italy, presented in a magnum that holds the equivalent of two standard bottles. It is a vintage Franciacorta, or Franciacorta Millesimato, made by bottle fermentation with no liqueur added at disgorgement. This is Franciacorta, not Champagne.

Chill the magnum for longer than a standard bottle, as the larger volume takes more time to cool, then serve at about 10 degrees in tulip glasses. Oysters, crudo and raw scallops make good partners, as the wine’s dryness and tension sit neatly alongside clean, briny flavours.

The 2019 is very dry yet keeps a lovely juiciness, with an elegant mousse, gentle tension and a long, persistent finish. The winery describes the Dosage Zéro as pure and sincere, the result of leaving the wine without added sugar so the vineyard stays in full view.
The 2019 blend brings together 24 base wines from 16 Chardonnay, 6 Pinot Noir and 2 Pinot Blanc vineyards, spread across the communes of Erbusco, Adro, Cazzago San Martino, Corte Franca and Passirano. The season gave small, loose bunches and low yields after a rainy spring and a very dry June, and the winery says these conditions gave its Vintage Collection an intense, fragrant aroma and a lively taste.
In the cellar, grapes are chilled and sorted, then washed in the winery’s berry spa of three soaking vats and a drying tunnel. After crushing without oxygen, the musts ferment in small oak casks for 5 months, and the wines move by gravity into tanks using a pair of flying tanks. Disgorgement also takes place without oxygen, using a system designed and patented by Ca’ del Bosco.
Dosage Zéro has a long history at the estate. It launched in 1978 as Pinot di Franciacorta Dosage Zéro and has carried the Vintage Collection name since the 2008 vintage.
The magnum suits a longer dinner with several people sharing the same wine, or a gift for someone who enjoys bone-dry sparkling styles.
