Serve it at about 10 to 12 degrees in a white wine glass, giving it a few minutes to open before the first sip. Its Pinot Noir body handles roast chicken with herbs or veal, and it also works with cured ham and mature hard cheese.
- Franciacorta Riserva, Iseo, Lombardy
- 100% Pinot Noir, blanc de noirs
- 8 years and 5 months on lees
The winery says Pinot Noir gives this wine its complex red fruit aromas along with body, length and longevity, and it describes the style as having austerity, tautness and expressive rigour. Expect a bone-dry palate with real weight, and a long, precise finish.
Making white wine from black grapes takes care at the press. The skins are dark but the pulp is colourless, so the bunches are pressed at low pressure to keep the skins intact and the juice white or only faintly pink. Before that, the grapes are picked by hand into small crates, tracked by vineyard of origin, chilled, sorted and washed in the winery’s berry spa, a system of three soaking vats and a drying tunnel.
The three vineyards, with vines averaging 22 years old in 2015, each produce their own base wine. These ferment in small oak casks, with 6 months of barrel ageing, then move by gravity before being blended to balance delicacy, nerve, vinosity and aroma. The wine went on tirage in April 2016 and stayed on its lees for 8 years and 5 months, which earns the Riserva classification. Disgorgement takes place without oxygen, and no liqueur is added, so the wine can show its origin without sugar.
The 2015 season was warm and early, and the winery notes the vintage for its structure and aromatic intensity.
A strong pick for Pinot Noir drinkers who prefer serious, dry sparkling wines with food.
