The Dalmore distillery stands on the shore of the Cromarty Firth at Alness in the northern Highlands, where whisky has been made since 1839. Its stag emblem comes from the Mackenzie family, who ran the distillery for generations; the clan crest dates back to 1263, when a Mackenzie ancestor is said to have saved King Alexander III of Scotland from a charging stag. The distillery is known for a rich house style built on long finishing in sherry casks, particularly Matusalem oloroso casks from the González Byass bodega in Jerez.
The Vintages Collection is a series of releases from hand-selected casks, each meant to capture the character of a single year at the distillery. Rather than a standard age statement blended for consistency, each vintage reflects the casks chosen from that year’s spirit, so no two vintages taste quite the same. This 2003 vintage was drawn from a small number of casks, giving it a character distinct from the core 18-year-old.
Serve it neat in a tasting glass, perhaps with a drop of water to open it up. It pairs well with dark chocolate, a cheeseboard with aged cheddar, or a slice of rich fruit cake.
