Highland Park 21YO 700ml is a single malt from Highland Park on Orkney, aged for at least 21 years. It is matured in a mix of first-fill sherry-seasoned casks and refill casks, and current batches are bottled at 46% ABV.

Highland Park stands on the edge of Kirkwall on Orkney, off Scotland’s northern coast, and has made whisky since 1798. It is one of the few distilleries that still turns some of its own barley by hand on traditional malting floors. The barley is dried over Orkney peat, which is rich in heather and gives a lighter, more aromatic smoke than peat from Islay. Highland Park also places strong emphasis on sherry-seasoned oak casks, which add dried fruit and spice to its honeyed, gently smoky style.
The 21-year-old was relaunched in 2019 and is now released in batches. Each batch brings together sherry-seasoned European and American oak casks with refill casks, so the sherry adds spice and fruit without hiding the distillery’s honey and heather character. Long ageing softens the smoke into a gentle background note, giving a rounded whisky that shows how Orkney malt develops over two decades. Highland Park is owned by the Edrington group, which also owns The Macallan.
Serve it neat in a tasting glass and let it open for a few minutes; a drop of water is optional. It pairs well with smoked salmon, aged Gouda or orange and dark chocolate.
