Chill it to around 10 degrees and pour into a white wine glass, which suits a Champagne with some barrel influence. Seafood with briny flavours is the natural match, so try it with pipi, cockles or a simple fish crudo dressed with lemon.
- Grand Cru Champagne from Chouilly, France
- Chardonnay, single-village Terroir range
- Brut Nature, no dosage
The nose is expressive and savoury, with delicate, tart aromas. The palate is elegant, with pronounced minerality and silky citrus notes, and the absence of sugar leaves a dry, clean finish where the village character stands out.
Chouilly sits in the north of the Côte des Blancs, and its clay-limestone soils are noted for Chardonnay with roundness and fullness, in contrast to the more mineral, tense wines further along the slope. That makes this bottling an interesting contrast to Lombard’s Cramant or Le Mesnil-sur-Oger wines, which share the grape and dosage approach but come from different ground.
In the cellar, the first fermentation takes place in stainless steel tanks. The wine then spends six months in barrels before its second fermentation in the bottle, and a further four to five years of bottle ageing follows before release. The time on lees gives texture, which matters in a wine that has no dosage to round it out.
Champagne Lombard is a family house in Épernay, founded in 1925 and relaunched by Thomas Lombard, the fourth generation. The house has shifted toward what it calls grands terroirs, with soil, climate, relief and viticulture guiding its choices. Its wines are described as pure, vinous, deep and intense, and single-village Brut Nature bottlings are central to that approach.
Worth a look for Champagne drinkers who enjoy comparing villages and want a rounder expression of Côte des Blancs Chardonnay.
