The Teeling name has deep roots in Dublin whiskey. Walter Teeling set up a distillery on Marrowbone Lane in the Liberties in 1782, and more than two centuries later his descendants Jack and Stephen Teeling founded the Teeling Whiskey Company. In 2015 they opened the Teeling distillery in Newmarket, the first new distillery in Dublin in 125 years.
Port casks have played a big part in Teeling’s style. Ruby port is part of the cask mix behind the core Teeling Single Malt, and the company has used ruby port casks for older limited releases too. Single cask bottlings let the team release an individual cask that stands out, rather than blending it into a larger batch.
Ruby port is a young, fruity style of fortified wine from the Douro Valley in northern Portugal, aged for a short time before bottling to keep its bright red fruit. Casks that held it tend to give whiskey a rosy colour and flavours of red berries, plum and cherry, with a little sweetness and gentle tannin layered over the vanilla and honey of the base spirit.
Because each single cask is different, check the label for the exact strength, age and cask number. Sip it neat first, then add a few drops of water if it is strong. It pairs well with dark chocolate, a cheeseboard with blue cheese, or a berry dessert.
