Archie Rose Rum Cask Single Malt 700ml is an Australian single malt whisky from Archie Rose Distilling Co. in Sydney. The whisky is matured in casks that previously held the distillery’s own Triple Molasses Rum, which brings caramel sweetness and a tropical fruit edge to the malt.

Archie Rose was founded in 2014 by Will Edwards and opened as a distillery and bar in Rosebery, a few kilometres south of the Sydney CBD, in March 2015. Edwards had three copper pot stills built by Peter Bailly, at the time Australia’s only still maker, and production moved to a larger site in Banksmeadow in 2020.
Grain sits at the centre of the Archie Rose approach. After six years of trials the distillery moved to 100 per cent locally sourced whisky malts in 2021, and it works with farmers to grow grain to its own specifications. Its rums are also made from raw materials grown in New South Wales and matured in the distillery’s own warehouse, so the casks used for this whisky come straight from its own stock rather than from another producer.
Pour it neat in a tulip glass first to get a sense of the cask influence, then try a few drops of water or a single large ice cube. It also works in a whisky Old Fashioned or a highball, and goes well with sticky date pudding, banana bread or a cheeseboard with aged cheddar.
