The story is in the name. These apera casks were destined to mature Archie Rose single malt, but instead they were filled with rye malt whisky not once but three times. Refilled casks tend to give a gentler wine influence than fresh ones, so the fortified wine character here sits alongside the spicy rye rather than covering it.
Archie Rose was founded in 2014 by Will Edwards and began distilling in Rosebery, south of the Sydney CBD, on copper pot stills built by Australian still maker Peter Bailly. Production moved to Banksmeadow in 2020, and since 2021 all of the distillery’s whisky malts have been locally sourced, including the Australian rye malt and pale malt that make up its rye malt whisky.
Try it neat in a tulip glass, then with a few drops of water to soften the 51% strength. It suits a rye Manhattan or Old Fashioned, and pairs well with poached stone fruit, crème brûlée or figs with blue cheese.
- Rye malt whisky from Archie Rose, Sydney
- Matured in Australian apera casks filled three times
- Trials & Exceptions release #16, 51% ABV
The nose opens with honey-poached peaches, pecan and ginger snaps, then violets, raisins and toffee apple. The palate is dense and weighty with plums, candied orange and figs moving into vanilla crème brûlée and maple-coated muesli, before a long finish of orchard fruit, sweet baking spice and a touch of drying oak.
A considered pick for rye whisky fans and anyone following Australian craft whisky.
