Fettercairn distillery has made whisky since 1824 in the village of Fettercairn, at the foot of the Cairngorm mountains in the eastern Highlands. It is known for its cooling ring: cold mountain water runs down the outside of the spirit still’s neck during distillation, which encourages more of the heavier vapours to fall back and leaves a lighter, fruitier spirit. The unicorn on every bottle is the distillery’s emblem, and its whiskies are often described as tropical in character.
The 16-year-old sits in the distillery’s core range alongside the 12-year-old, and it has been released in several editions since 2020. The first edition used some chocolate malt and a sherry and port cask finish, while more recent editions lean on ex-bourbon American oak to frame the fruit. Bottling without chill filtration keeps more of the natural oils and texture, which suits the rich tropical style. Fettercairn belongs to the Whyte and Mackay group, which also owns The Dalmore and Jura.
Enjoy it neat or with a splash of water, which lifts the fruit. It pairs well with grilled pineapple, a mango dessert or a mild, creamy cheese.

Expect grilled pineapple, vanilla and baking spice on the nose. The palate brings passion fruit, mango and honey with a hint of Turkish delight, and the finish has mandarin, poached pear, cacao and ginger cake.
