Serve it well chilled in a white wine glass. Fresh oysters or crumbed fish with lemon suit its citrus line and pastry notes.
- Traditional method from Marlborough, New Zealand
- Chardonnay and Pinot Noir, hand harvested
- At least thirty months on lees
The wine honours Dawn Ibbotson, the matriarch of Saint Clair, who turned 100 in December 2014. The estate created a méthode traditionnelle in her name to mark the occasion.
Biscuit, baked pastry, meringue and lemon zest sit on the nose with a hint of oyster shell. A citrus thread runs through a palate of brazil nut, pastry and dried fruit, with a fine mousse.
A good pick for anyone interested in how Marlborough handles long lees ageing.
