Description
Valdespino Amontillado Tio Diego is an amontillado sherry from Valdespino, the Jerez bodega owned by the Estévez family since 1999 and known for single-vineyard sherries. It comes from Palomino grown in the Macharnudo Alto vineyard on white albariza soil and continues the Inocente fino solera. Fermented in American oak barrels, the wine first ages for years under flor; as the flor fades it ages oxidatively, concentrating naturally with no extra fortification.

Serve it lightly chilled, around 12 to 14 degrees, in a white wine glass. It suits consommé, mushroom dishes, roast chicken, cured meats and aged cheese.
- Single-vineyard amontillado from Macharnudo Alto, Jerez
- Aged under flor, then oxidatively
- Very dry, complex style
Intense amber in colour, it combines flor and oxidative notes, with yeast, bread, dried fruit and hints of toffee, caramel and leather. The palate is very dry and complex, with a generous body and balanced acidity.
A rewarding bottle for sherry enthusiasts and anyone curious about long-aged dry wines.
