Description
Teeling Irish Whiskey 2008 Single Cask Sherry PX 700ml is a single cask Irish whiskey from the Teeling Whiskey Company, distilled in 2008 and matured with a Pedro Ximénez sherry cask. As a single cask release, every bottle comes from one cask, so its colour, strength and flavour are unique to that cask.

The Teeling name has deep roots in Dublin whiskey. Walter Teeling set up a distillery on Marrowbone Lane in the Liberties in 1782, and more than two centuries later his descendants Jack and Stephen Teeling founded the Teeling Whiskey Company. In 2015 they opened the Teeling distillery in Newmarket, the first new distillery in Dublin in 125 years.
A 2008 distillation date means this spirit was made several years before the Newmarket distillery opened. Teeling has long matured and finished whiskey in a wide range of casks, and its single cask bottlings show off individual casks that the team considers worth releasing on their own rather than blending away.
Pedro Ximénez is the sweetest style of sherry, made from sun-dried grapes in southern Spain, and the casks that held it are prized by whiskey makers. A PX cask usually brings deep colour and flavours of raisin, fig, dates and dark toffee, while the long years in wood since 2008 add spice and depth.
Because each single cask differs, check the label for the exact strength and cask details. Sip it neat first in a tulip glass, then add a few drops of water if it is strong. It pairs well with dark chocolate, a cheeseboard with blue cheese, or a Christmas cake.
